Rosemary Lemon Chicken Recipe 1 Tbsp oil 1 Tbsp butter 5 bone-in chicken thighs Salt and pepper to taste 3/4 cup onion, sliced 2 garlic cloves, minced 1 cup sliced carrots 1 cup chopped celery 3 fresh sprigs of Thyme 1 fresh sprig of Rosemary Juice from 2 lemons 3 cups chicken broth Heat Dutch Oven and melt butter/oil. Brown skin of chicken. Then add above ingredients and cook until the chicken is done. It should take about 30-40 minutes with the temperature at 350 degrees.
As we are preparing for our thru hike of the Appalachian Trail we are very focused on what food we are bringing. Food is a HUGE component for a successful trip. And it’s not just the type of food, but the right types of foods so you have proper nutrition for your body to function at its best. Also, when on a budget, making our own meals is drastically cheaper than buying prepared dehydrated meals. So we are going to talk about what we will be eating when doing our long distance hike.
