Dutch Oven Lemon Rosemary Chicken

Rosemary Lemon Chicken Recipe 
1 Tbsp oil
1 Tbsp butter
5 bone-in chicken thighs
Salt and pepper to taste
3/4 cup onion, sliced 
2 garlic cloves, minced 
1 cup sliced carrots 
1 cup chopped celery
3 fresh sprigs of Thyme
1 fresh sprig of Rosemary 
Juice from 2 lemons
3 cups chicken broth
​

Heat Dutch Oven and melt butter/oil. Brown skin of chicken. Then add above ingredients and cook until the chicken is done. It should take about 30-40 minutes with the temperature at 350 degrees.

As we are preparing for our thru hike of the Appalachian Trail we are very focused on what food we are bringing. Food is a HUGE component for a successful trip. And it’s not just the type of food, but the right types of foods so you have proper nutrition for your body to function at its best. Also, when on a budget, making our own meals is drastically cheaper than buying prepared dehydrated meals. So we are going to talk about what we will be eating when doing our long distance hike.

We have chosen to prepare most our own meals in order to:

· Save some money
· Make sure we are getting the proper nutrition

Caramel Sticky Buns are a family favorite! My mom would make these for special occasions or if we had guests staying over at our home growing up. The delicious aroma of the cinnamon and caramel wafting through the house as the rolls are baking brings back those special memories!

Being from a Greek family food is an important part of life! Avgolemono soup is the Greek version of the American classic chicken noodle soup. This recipe is very flavorful while being quick and easy to make. I remember having this soup vividly as a kid as it was not like any other “traditional” soups I’ve had. But it was one of our traditional soups we had while visiting my grandpa’s Greek restaurant on a cold winter night in Wisconsin!

For as long as I can remember, my mom would make cinnamon rolls for us EVERY Christmas! It started with my dad’s mom making them with the left over pie crust dough. She would roll out the leftover dough, add butter, cinnamon and sugar, roll and bake. Then my mom took over when her and dad were married.

Tom and Jerry is a traditional Wisconsin beverage served during Christmastime. I just had it yesterday for the first time and is SO delicious, I just had to share the recipe!

​1 cup milk

pinch of ground nutmeg
5 tsp brandy
2.5 tsp confectioners sugar
1/2 of an egg white from an egg
1/2 of an egg yolk

1: A mom who is a great baker (High Prairie Life) and will can some apple pie filling for you 
2: Homemade canned pie filling
3: Store bought pie crust
4: A pie pan
5: Any type of cookie cutter or just a knife if you're feeling super lazy

Time to make: 5 mins
Time to cook: 45-50 mins
